Spinach and Salmon Roulade

 Ingredients

Pastry

  • frozen spinach (shredded) - 500g 
  • garlic - 4 cloves 
  • butter – 1 tablespoon 
  • eggs – 4 
  • flour – 1 tablespoon 
  • salt (optional)
  • pepper 

Filling

  • cream cheese – 300g . Edit: use cheese spread.
  • smoked salmon (sliced): 400g 

 

Process

  1. Melt butter in the pan and fry spinach with minced garlic, and pepper. If you use smoked salmon, then no salt is needed. If you only use cheese, then add salt. Strain it to discard the water and let it cool.  
  2. Crack the eggs and separate yolks from withes. Mix yolks with cooled spinach.  
  3. Beat the egg whites till stiff. Add them delicately to the spinach together with flour, mix.  
  4. Align a sheet of parchment paper or aluminum foil onto a baking sheet. Use butter to grease it. Pour the mix on it. 
  5. Bake for 15 minutes at 190C(375F). Take out the pastry and let it cool. Carefully separate the pastry from the aluminum foil.
  6. Spread the cheese on the pastry, put the salmon on top and roll it into roulade. Wrap it in an aluminum foil and let it sit in the fridge for few hours. 

I cut the pastry in half, used half for cheese only, and half for cheese + salmon. Both taste good.
