Leek salad

  Ingredients 1 leek 2 hard boiled egg 100g canned corn 100g shredded cheese 1 TBSP mayo  1 tsp mustard (optional) 1/2 tsp salt Procedure Cut the white part of the leek. Slice them into 2mm thick discs. Add salt to leek, mix, and let sit for 15 minutes Squeeze out liquid Optional: put leeks on a strainer and pour boiling water on it Cut eggs into small slices Mix eggs, leeks, cheese, corn, mayo and mustard together.

Meat skewers

  Ingredients 2.5 Lb lamb or pork 3 TBSP ground cumin 1 TBSP ground pepper 1/2 TBSP salt 1/2 tsp cayenne pepper  1/2 TBSP flour 1 TBSP oil Procedure Cut meat into cubes at the size of 1cm x 1cm x 1cm. In a bowl, mix all the dry spices. Add oil and dry spices to meat. Mix well. Cover the container and let it sit in the fridge overnight. If using bamboo skewers, let them soak in water for 10 minutes. Put meat on skewers.  Grill

  Ingredients 1kg potato 300g flour 1 onion 1 egg Thick-cut bacon (200g) salt Procedure Boil potatoes, let them cool down, peel Mash potatoes Add a pinch of salt (1/4 tsp), 1 egg and 200g flour to mashed potato, mix Add some flour to the surface. Roll the mix into a dough.  Split the dough into 6 parts. For each part, roll it so that the diameter is about 2.5cm. Flatten the roll so that the hight is about the pinky finger. Cut it (cross section) to slices, each slice is about 4cm x 1cm x 1cm. Boil a pot of water with 1 TBSP In the mean time, dice bacon and onions.  When water is boiling, add potato slices into the pot. Add 1 by 1, make sure that the water is boiling all the time. I split mine into 4 batches. For each batch, when the potato slices float up to the surface, we can use a strainer to pick them out and put them in a single layer on a plate. Cook bacon on a frying pan, add onion, cook till onion is transparent. Add it on top of the potato on the plate.
