Leek salad

 Ingredients

  • 1 leek
  • 2 hard boiled egg
  • 100g canned corn
  • 100g shredded cheese
  • 1 TBSP mayo 
  • 1 tsp mustard (optional)
  • 1/2 tsp salt

Procedure

  1. Cut the white part of the leek. Slice them into 2mm thick discs.
  2. Add salt to leek, mix, and let sit for 15 minutes
  3. Squeeze out liquid
  4. Optional: put leeks on a strainer and pour boiling water on it
  5. Cut eggs into small slices
  6. Mix eggs, leeks, cheese, corn, mayo and mustard together.
