carnitas (pork) taco

  Ingredients For pork 4Lb (2kg) pork (Any cut that is not too lean, for example, shoulder picnic roast )   2 1/2 tsp salt 1 tsp black pepper 1 TBSP oregano 1 tsb ground cumin 4 cloves of garlic, minced 1 onion, chopped 3/4 cup orange juice (~2 oranges) For taco tortilla lettuce chopped tomato chopped cilantro chopped avocado chopped shredded cheese  black refried beans (in a can so that you don't need to cook it)  Procedure Rinse pork. Pat dry. Mix salt, pepper, cumin, oregano in a bowl. Rub on pork. Put in slow cooker.  Add garlic and onions on top. Add orange juice. Set Low, cook for 10 hours.  Take out pork, use two forks to pull the pork to shreds. Transfer soup from slow cooker into a frying pan, boil to reduce it, add shredded pork and mix. Keep reducing the liquid till it is gone and pork gets a bit crispy. Assemble taco

Roast beef

  Ingredients 1Lb (500g) beef (any roast cut or beef stew cut will do, choose the ones with some fat/white parts)    1/2 Lb potato (Use 1Lb if you or your family really like potatoes). 1/2 medium sized onion. 400g fresh tomatoes (2-4 depending on size) or 1 can of 400g diced tomato 1/4 Lb carrots (use baby carrots, otherwise, peel and cut to 1 inch long chunks). Use 1/2 Lb carrots if you really want yourself or your family to eat more veggies. 2 cloves of garlic Soy sauce Wine (any cooking wine or cheap wine)  Cooking oil Five spice powder Salt Procedure Cut beef into 1 inch cubes, soak in water and wash several times till no blood coming out. Take beef out, marinate in 1 TBSP soy sauce and 2 TBSP wine for 10+ minutes. While waiting for the marinate time, chop onions, chop garlic. If needed, chop tomatoes. Christmas sauerkraut

  Ingredients 1kg sauerkraut   100-150g  butter 10 TBSP split peas (dry) 2-4 bouillon cubes 20-40g dried porcini mushrooms 4-6 potatoes salt Procedure The night before cooking: Put split peas and mushrooms in a pot (2-3 liters), cover with water (5 cm above peas and mushroom level) and leave it overnight to soak. In another pot, add sauerkraut, water (enough to cover sauerkraut), and 1/4 tablespoon of salt.   B oil for one hour. Use a strainer to get rid of liquid and wash once.  Keep medium flame, add butter to sauerkraut, stir till butter melts. Turn off flame, set the pot aside. Bring the peas and mushrooms to a boil, add  bouillon cubes to taste.  Reduce to simmer and let it cook for 15-30 minutes till peas are soft, stir occasionally to make sure that peas are not stuck at the bottom and get burnt. Green onion pancake

 Ingredients 1 cup (150g) All purpose flour 1/2 cup (120ml) water 3 TBSP roasted sesame seeds, use a blender to grind them to powder like. If the sesame seeds are not roasted, you can roast them by doing the following: Put the seeds in a frying pan. Place on medium high flame.  If you see sesame seeds start popping/jumping, take the pan off the flame immediately. It takes about one minute to roast them. Do not overcook sesame seeds, because that will make them bitter. Let the seeds cool down in the frying pan before put them into the blender.  1 TBSP butter 1/2 cup chopped green onions 1/4 tsp salt 1/4 tsp five-spice powder oil Procedure Heat up water to about 70C, mix with flour. Knead to make a ball-shaped dough.  Cover and let it sit for 15 minutes. Sprinkle some flour on the counter surface, knead the dough again till smooth. Asian Orange Salad

  Ingredients For salad dressing: 1 TBSP soy sauce 1 TBSP balsamic vinegar 1 TBSP olive oil 1.5 tsp honey 1 orange  1/2 cucumber  1 cup of coleslaw  1 romaine lettuce heart Optional: 1 TBSP of chopped cilantro  Procedure Mix all ingredients to make salad dressing in a big bowl.   Chop orange and add to the bowl. Cut cucumber into quarters, remove seeds, chop. Add to the bowl. Chop cilantro and add to the bowl.  Mix everything in the bowl. Chop lettuce, add to the bowl. Add coleslaw to the bowl. Mix.

  Ingredients Polish Kielbasa - 2 pieces, about 20cm long each 100-200g Dried porcini mushrooms 1 Onion (medium size) 3 cloves of garlic 2 Bay leaves 5 Whole grains of allspice 3 Russet potatoes 2 TBSP Sour cream (or heavy cream, or cream spread) 1-2 tsp Grated horseradish  1/2 lemon Salt, Pepper Marjoram (optional) 1 TBSP flour Procedure Cut sausage into big chunks, cut onion in halves, peal garlic, rinse mushroom. Put them in big pot.  Add to pot bay leaves, and allspice berries. Add 3L water to pot. Set flame on high flame and wait for water to boil. Peal potatoes, cut into thick slices, put into boiling soup.  Turn the flame to low and keep simmering for about 10 minutes till potatoes are soft. In a bowl, mix well 1 TBSP flour with 4 TBSP water. Slowly add to the pot while stirring the soup. Add 2 tsp of salt to soup. Check taste, add more if needed. Add 2 tsp of horseradish. Check taste, add more if needed.
