carnitas (pork) taco

 Ingredients

For pork

  • 4Lb (2kg) pork (Any cut that is not too lean, for example, shoulder picnic roast) 
  • 2 1/2 tsp salt
  • 1 tsp black pepper
  • 1 TBSP oregano

  • 1 tsb ground cumin

  • 4 cloves of garlic, minced

  • 1 onion, chopped

  • 3/4 cup orange juice (~2 oranges)

For taco

  • tortilla
  • lettuce chopped
  • tomato chopped
  • cilantro chopped
  • avocado chopped
  • shredded cheese 
  • black refried beans (in a can so that you don't need to cook it) 

    Procedure

    1. Rinse pork. Pat dry.
    2. Mix salt, pepper, cumin, oregano in a bowl. Rub on pork. Put in slow cooker. 
    3. Add garlic and onions on top.
    4. Add orange juice.
    5. Set Low, cook for 10 hours. 
    6. Take out pork, use two forks to pull the pork to shreds.
    7. Transfer soup from slow cooker into a frying pan, boil to reduce it, add shredded pork and mix. Keep reducing the liquid till it is gone and pork gets a bit crispy.
    8. Assemble taco
