Green onion pancake

 Ingredients

  • 1 cup (150g) All purpose flour
  • 1/2 cup (120ml) water
  • 3 TBSP roasted sesame seeds, use a blender to grind them to powder like.
    • If the sesame seeds are not roasted, you can roast them by doing the following:
      • Put the seeds in a frying pan. Place on medium high flame. 
      • If you see sesame seeds start popping/jumping, take the pan off the flame immediately. It takes about one minute to roast them. Do not overcook sesame seeds, because that will make them bitter.
      • Let the seeds cool down in the frying pan before put them into the blender. 
  • 1 TBSP butter
  • 1/2 cup chopped green onions
  • 1/4 tsp salt
  • 1/4 tsp five-spice powder
  • oil

    Procedure

    1. Heat up water to about 70C, mix with flour. Knead to make a ball-shaped dough. 
    2. Cover and let it sit for 15 minutes.
    3. Sprinkle some flour on the counter surface, knead the dough again till smooth.
    4. Use a rolling pin to spread it to a 24cm x 24cm square.
    5. Spread melted butter.
    6. Sprinkle salt, five-spice powder, sesame, green onions.
    7. Roll up.
    8. Cut to 6 or 8 pieces.
    9. Take one piece, seal the top and bottom. Sprinkle some flour on the counter surface. Roll the piece into a pancake.
    10. Put a non-stick frying pan on medium flame. Add oil to cover the frying pan. Put the pancake on to fry it. Turn and flip the pancake often. When the pancake is golden brown and crispy, take it out. Use a paper towel to remove extra oil if needed.
