Almond flour cookie

 Ingredients

  • 4 cups Almond flour

  • 1/2 cup butter

  • 1/4 cup oil

  • 1 cup sugar

  • 1 cup crushed pecan or walnut

  • 3 eggs

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp vanilla extract (optional)

    Procedure

    1. Melt butter by microwaving for 30 sec. 
    2. Mix melted butter, oil, sugar, vanilla, eggs
    3. Add baking soda and salt
    4. Add almond flour, 1 cup at a time. Mix well after each addition
    5. Fold in pecans
    6. Preheat oven to 350F
    7. Scoop the dough with a tablespoon, drop the ball on a baking sheet, spacing 3 inches apart
    8. Bake 11-15 minutes till the edge of the top turns from white to a bit golden in color
