Almond flour cookie
Ingredients
4 cups Almond flour
1/2 cup butter
1/4 cup oil
1 cup sugar
1 cup crushed pecan or walnut
3 eggs
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract (optional)
Procedure
- Melt butter by microwaving for 30 sec.
- Mix melted butter, oil, sugar, vanilla, eggs
- Add baking soda and salt
- Add almond flour, 1 cup at a time. Mix well after each addition
- Fold in pecans
- Preheat oven to 350F
- Scoop the dough with a tablespoon, drop the ball on a baking sheet, spacing 3 inches apart
- Bake 11-15 minutes till the edge of the top turns from white to a bit golden in color
