Ingredients
- 1 cup (240 ml) dried green lentils (red is fine too)
- 1/4 cup (60 ml) canola oil
- 1-1/2 medium yellow onions, finely chopped
- 1-1/2 tbsp pureed fresh garlic
- 1-1/2 tbsp pureed fresh peeled ginger
- 1tsp turmeric
- 3 cups water
- 1-1/2 tsp salt or to taste
Procedure
- Put lentils with 3 cups of water in a pot. Boil for five minutes. Set aside.
- Chop onions to really fine pieces. (food processor works)
- Add oil to a pan, add onions. Stir fry for 7 minutes till onion is transparent. It looks like a white paste. Do not brown onions.
- Chop garlic and ginger while onions are cooking. (garlic press works)
- When onions are done, add garlic, ginger and turmeric. Stir fry for 2 minutes.
- Drain lentils and add to the pan, add 2 cups of water, bring to a boil.
- Reduce to simmer, cook 10-30 minutes (depends on the type of lentils). Check every 10 minutes to see whether lentils are soft.
- Once lentils are soft, increase the flame to reduce the liquid.
- After liquid is reduced, add salt to taste.
