Misir Alicha

Ingredients

  • 1 cup (240 ml) dried green lentils (red is fine too)
  • 1/4 cup (60 ml) canola oil
  • 1-1/2 medium yellow onions, finely chopped
  • 1-1/2 tbsp pureed fresh garlic
  • 1-1/2 tbsp pureed fresh peeled ginger
  • 1tsp turmeric
  • 3 cups water
  • 1-1/2 tsp salt or to taste

    Procedure

    1. Put lentils with 3 cups of water in a pot. Boil for five minutes. Set aside.
    2. Chop onions to really fine pieces. (food processor works)
    3. Add oil to a pan, add onions. Stir fry for 7 minutes till onion is transparent. It looks like a white paste. Do not brown onions.
    4. Chop garlic and ginger while onions are cooking. (garlic press works)
    5. When onions are done, add garlic, ginger and turmeric. Stir fry for 2 minutes.
    6. Drain lentils and add to the pan, add 2 cups of water, bring to a boil.
    7. Reduce to simmer, cook 10-30 minutes (depends on the type of lentils). Check every 10 minutes to see whether lentils are soft.
    8. Once lentils are soft, increase the flame to reduce the liquid. 
    9. After liquid is reduced, add salt to taste.
