Beef Caldo

  Ingredients 1/2 tbsp salt 1 clove of garlic 1 onion 3 lbs. beef shanks center cut bone-in Alternative: Short Loin with bone Alternative: Beef knuckle bones for soup 1 lb. potatoes  1 lb. carrots  You can buy regular carrots and cut them to 5cm length, or buy baby carrots and use directly. 3 corn on the cob (optional), cut into 5cm in length a bunch of cilantro (optional) 2 squash (any kind will do) Procedure Clean all veggies.  Use a pressure pot to cook the beef, together with lots of water (must be enough to submerge the beef), the onion, one clove of garlic, and 1/2 tbsp salt. When boiling, change the flame accordingly so that the pressure pot does not explode and cook for 30 minutes If you use a regular pot, let it simmer for 1 - 2 hours. The meat should be really soft and fall from bones upon touch. I cooked some cat food to replace the canned food. Step 1. Make a "smell-good" mixture I bought them from the Chinese grocery store Ranch 99. The quantity listed below is the smallest package I can find. Chicken heart 1Lb Pork liver 1Lb Swai fish nugget 1Lb (This one has no bones) Salmon fish edges 1Lb (This one has some bones and I removed the bones) Basically equal weight of each item. I ground them with food processor, and put the mixture to 1Lb per zip bag. I stored zip bags in the freezer.    Step 2. Prepare chicken meat and make chicken meal When I bought chicken breasts with bones or chicken leg quarters, I cut bones, skin, and fat aside from meat.  I ground the chicken meat with food processor. Put them in 1Lb per zip bag, and store the bags in the freezer.  For the remaining bones, skin and fat, I put them in a pressure pot cooker, added water to submerge the chicken, and cooked for 0.5 hr. Spinach and Salmon Roulade

  I ngredients Pastry frozen spinach (shredded) - 500g   garlic - 4 cloves   butter – 1 tablespoon   eggs – 4   flour – 1 tablespoon   salt  (optional) pepper   Filling cream cheese – 300g  . Edit: use cheese spread. smoked salmon (sliced): 400g     Process Melt butter in the pan and fry spinach with minced garlic, and pepper. If you use smoked salmon, then no salt is needed. If you only use cheese, then add salt. Strain it to discard the water and let it cool.    Crack the eggs and separate yolks from withes. Mix yolks with cooled spinach.    Beat the egg whites till stiff. Add them delicately to the spinach together with flour, mix.    Align a sheet of parchment paper or aluminum foil onto a baking sheet. Use butter to grease it. Basque Burnt Cheesecake

Ingredients Cream cheese 8 oz (250g, anywhere 200-300g is good, depending on the package available to you) Heavy whipping cream 1 cup (100g) 2 Eggs Sugar 1/4 cup (60g) All-purpose flour 1 TBSP (5g) Process Preheat oven to 420F (215C). Put everything in the blender, blend well. Place parchment paper in a 6-inch Pyrex glass container or a cake pan, pour in the mixture. Place container in oven, bake 35 minutes. Let it sit in fridge overnight.

Bigos

Ingredient  1 kg (2Lb) Sauerkraut 1 kg (2Lb) white/green cabbage, cut to strips. 0.5 kg (1Lb) beef or pork or smoked bacon, cut to strips of 1x5cm 0.5 kg (1Lb) Polish sausage, cut in half, then to 0.5cm thick semicircle  slices. Dried Porcini mushrooms (one pack, the bigger the better but whatever size is OK) Spice  5-6 bay leaves 15 allspice seeds 12 pepper corn seeds 10 dried plums 1 cup (250 ml) red wine 1 tsp Salt  Optional, mushroom  Bouillon cube Process Put mushroom in 1 bowl of water, set aside. Drain Sauerkraut to discard the liquid. Put the remaining cabbage in the big pot. Add cabbage strips to the pot. Fry the sausage on a frying pan, add sausage and liquid to pot. Sear the meat on a frying pan, add meat to pot. Cut the mushroom if the pieces are bigger than 2x2cm. Pour mushroom water into pot. Add all spices except red wine into pot. Close lid, bring to a boil, reduce to simmer. Cook 1 hour.  Add wine. Check flavor, add water or salt if needed....

Spinach Empanada

  Crust 2 1/2 cups flour 1/2 tbsp salt 4 oz butter, chilled and cut into 1/4  inch cubes   1 egg 1/3 cup ice water Mix the dry ingredients in a bowl. Add the rest of the ingredients. Shape the dough into a ball. Divide them into 18 parts. Tightly cover the mixture with plastic wrap and refrigerate for 30 minutes. Filling 2 tbsp unsalted butter  1/4 cup diced onion 2 cups frozen spinach (chopped) 1 egg 1/2 cup of ricotta cheese  1/4 cup shredded parmesan cheese (okay to replace with ricotta cheese) 1 tsp salt In a large skillet put butter, onion and spinach over medium heat. Stir and cook for several minutes. Set aside. In a large bowl, combine egg, ricotta cheese, parmesan and salt. Put the spinach mixture in and stir until they are combined.   Process Use a rolling pin to flatten the dough to make wrappers. Put in fillings. Make empanadas. Ingredients 1 cabbage 1 big onion, minced 1 Lb of ground meat (half/half pork and beef or any meat, the meat should have some fat) 1 egg 6 TBSP of white rice (the sticker the better) 100g butter Spice 2 Bouillon cubes (any kind you like) 1/2 tsp Chinese five spice mix 1 tsp Poultry seasoning 1/2 tsp Mediterranean seasoning 1/2 tsp Curry powder 1/2 tsp Garlic powder 1/2 tsp Herbes de Provence 1/2 tsp Salt 1/2 tsp Pepper Process Mix meat, onion, egg and spices together. [The pretty way is to boil cabbage leaves and wrap them around the meat balls. We do it the easy way. See below.]  Chop cabbage to ~1 inch squares.  Add 1 inch of water, butter, 2 bouillon cubes to pot, bring to a boil so that they mix.  Pave one layer of cabbage at the bottom of the pot.
