Shepherd's Purse Wonton 荠菜馄饨

  Ingredients For Wonton filling 1 Lb frozen Shepherd's Purse (荠菜) 6 oz pork 1 egg 1 TBSP ginger 2 cloves of garlic 1 TBSP onion Spice: 3/4 tsp salt, 1/2 tsp pepper, 1/2 tsp chicken bouillon ,  1/2 TBSP soy sauce, 1/2 TBSP oyster sauce, 1/2 TBSP sesame oil Wonton wrappers For soup Spice: 1/4 tsp salt, 1/4 tsp  chicken bouillon, 1/2 tsp soy sauce, 1/2 tsp sesame oil Optional decoration: seaweed, green onion, cilantro Optional decoration: 1 egg Procedure Thaw Shepherd's Purse, put it into boiling water. When water boils again, put on strainer, rinse with cold water.  Put ginger, garlic, onion in food processor to chop to small pieces. Add pork to food processor, chop to make ground pork. Take everything out of food processor, add spices, mix well. Put Shepherd's Purse in food processor, chop to small pieces, add to pork Add 1 egg, mix well. Use the filling to make wontons. Ice cream

    Ingredients 2 egg yolks 2 TBSP+2tsp sugar 1/2 lemon (for juice) 1/4 cup milk 3/4 cup (heavy or regular) whipping cream 1 pinch of salt 1 tsp vanilla extract Procedure Use an egg mixture to mix egg yolks, 1 TBSP and 1 tsp sugar, drops of lemon juice. Use low flame to heat up milk till it has small bubbles. Add salt, egg mixture, keep mixing while adding egg mixture. Keep using low flame and mixing till the mixture turns thick. Turn off flame and put mixture aside. In a bowl, add cream,  1 TBSP and 1 tsp sugar, remaining lemon juice. Use a hand mixer to mix them till the mixture puffs up. Add the egg mixture to the bowl, add vanilla. Use hand mixer to mix till mixture puffs up.  Put to freezer for 5 hours.

Marta's grandma's meatball

  Ingredients 500g ground pork 1 onion, finely chopped 1 egg spices for meatballs: 2 tsp poultry seasoning, 1 tsp chicken bouillon, 1 tsp herbes de provence, 1/2 tsp Chinese five spice, 1/3 tsp ground turmeric 1 fist-size chunk of dried up french bread 1 cup plain bread crumbs spice for soup: 1 TBSP chicken bouillon oil milk Procedure Soak bread in milk, flip it occasionally to make sure that it is fully soaked Add to a big bowl the following: pork, onion, egg, spices for meatballs. Squeeze milk out of bread and put the bread into the bowl.  Mix everything in the bowl.  Shape mix into meatballs and place on a plate. Put bread crumbs in a small bowl. Coat meatballs with bread crumbs. Use a big pot, add water so that water level is 2cm. Add 1 TBSP chicken bouillon and bring to a boil, then reduce to a simmer. Meat Pancakes

Ingredients 1 cup Flour 1/2 cup Water 300g Ground pork or beef 1/2 cup chopped onion 1/2 teaspoon salt 1/2 teaspoon sugar 1/2 teaspoon soy sauce Procedure Mix flour with water, knead till the dough becomes one ball and there is no loose flour.  Let the dough sit in a covered container for 30 minutes to 1 hr.  Combine meat, onion, salt, sugar, soy sauce. Mix. Split into 4 parts. Put plastic wraps on the working surface to reduce the messiness. Spread flour on the plastic wrap so that the dough does not stick. Take the dough out carefully - it is sticky. Cut the dough into four, and roll into four balls. Use a rolling pin to flatten a dough into a sheet in the shape of a square. If the dough gets sticky, just spread flour. Cut the sheet, spread 1 part of the meat on 3/4 of the sheet, fold. Press to seal the edges. Mussels

    Ingredients 500g mussels (no shells, cooked)  8 cloves of garlic, crushed  300ml dry white wine 100ml heavy cream 1 tsp parsley (dried flakes) Procedure Mix wine, garlic, cream, parsley in a pot.  Boil 3 minutes. Add mussels, boil 3 minutes.  Check taste, add salt if needed.  Serve with white bread

Tandoori Chicken

    Ingredients 1/2 TBSP crushed garlic ( 2 cloves) 1/2 TBSP crushed ginger 1 1/4 cup plain Greek yogurt (300 ml) 1 TBSP Tandoori spice 2 tsp salt 2 TBSP lemon juice 1 kg chicken, should be pieces with bones like wings or legs, I used 6 drum sticks Procedure Mix all spice and yogurt in a bowl to make the marinade.  Make a few deep cuts on the chicken, stab chicken with a knife to make holes in the meat. This will allow the marinade to go deeper into the meat. Marinade chicken for 2 hours to overnight. Put chicken on a rack that is on top of a tray . Preheat air fryer to 350 F.  Put chicken in the air fryer. Cook 10 minutes. Flip chicken, cook another 10 minutes. 

Cauliflower and potato curry

  Ingredients Cauliflower 2 or 3 Russet Potatoes 1/2 cup Dried split peas 2 Big tomatoes (or 3 Roma tomatoes) 1 Chili pepper (optional, skip if you don't want it to be spicy) Oil Curcuma, Salt Indian 5 spices: Cumin, Mustard, Fennel, Fenugreek, Black caraway (If you do not have all, just use whatever you have) Fresh cilantro (optional) Procedure Put split peas in a bowl, add water to 2cm above peas, put in microwave for 4 minutes till water is boiling. Let the bowl set aside.  Cut potato to wedges Cut 1/3 or 1/4 of cauliflower to small chunks. The total volume of cauliflower is about the same as potato.  Add 2 TBSP of oil to a big pot, add  cauliflower, stir till the cauliflower is browned. Add 1 tsp of curcuma, keep stir till well mixed. Take cauliflower out into a bowl. Add potatoes to the same pot, stir fry till potatoes are slightly browned. Add oil to the pot if the pot is dry.
