Pork hock

  Ingredients 1 pork hock 2 medium size onions, quartered 3 carrots, cut to 1 inch slices  4 garlic cloves, peeled and cut in halves  1 bottle of beer  2 TBSP bouillon (or 2 cubes) 3-5 bay leaves 5 whole black pepper corns 6 whole allspice berries 1/3 cup of mustard 1 dried chilli pepper 1/2 cup honey Procedure Add oil to frying pan, use high heat to brown onions and carrots, move veggies to a big pot. In the same pan, fry garlic for 30 sec to 1 min, move to big pot.  In the same pan, brown pork hock. Turn pork to brown all sides. Put in the big pot. Move veggies around so that pork is touching the bottom of the pot. Add beer to pot. The liquid should cover 1/3 of the height of the pork, if beer is not enough, add water. Add  bouillon, bay leaves, black pepper corns, allspice, mustard, pepper Set oven at 350F, cover big pot with lid, put in oven.  Bake for 2 hours till pork is soft - check with a fork. Spring rolls

    Ingredients 1Lb Bean sprout 1Lb Shredded tofu (百叶丝) 2Lb Napa cabbage, cut to slices 1Lb Chicken, can be either of the two: 1) cooked and shredded or 2) raw, cut to strips or grounded.  1Lb Carrots, shredded Spring roll wrappers (40-50) Procedure Stir fry all veggie and chicken, add salt to taste.  Mix everything. Squeeze out liquid. Set aside. In a cup, add 1 TBSP flour, add some water to make a paste. Make spring rolls, use paste to glue the edges. Brush oil on spring rolls Set air fryer to 390F. Fry spring rolls for 5 minutes, then turn to the other side, fry another 5 minutes.

Almond flour brownie

Ingredients 1 1/2 cups (144g) almond flour 3/4 cup (64g) unsweetened cocoa, Dutch-process or natural 1/2 cup butter, melted 1/2 cup sugar 1/2 tsp salt 1 tsp baking powder 1 teaspoon vanilla extract 3 large eggs Procedure Preheat oven to 350°F. Grease an 8" square baking container. Mix together the melted butter, sugar, salt, vanilla, cocoa, and eggs. Stir in almond flower and baking powder. Pour the batter to the greased baking container.  Bake in the oven for 33-38 minutes. Check by stabbing a toothpick into the middle. If the toothpick comes out without sticky/gluey stuff, then it is done. Wait till it completely cooled down before cutting it. After it is cooled in the fridge, it is much easier to cut into pieces without breaking or crumbling. 

Almond flour cookie

  Ingredients 4 cups Almond flour 1/2 cup butter 1/4 cup oil 1 cup sugar 1 cup crushed pecan or walnut 3 eggs 1 tsp baking soda 1/2 tsp salt 1 tsp vanilla extract (optional) Procedure Melt butter by microwaving for 30 sec.  Mix melted butter, oil, sugar, vanilla, eggs Add baking soda and salt Add almond flour, 1 cup at a time. Mix well after each addition Fold in pecans Preheat oven to 350F Scoop the dough with a tablespoon, drop the ball on a baking sheet, spacing 3 inches apart Bake 11-15 minutes till the edge of the top turns from white to a bit golden in color
